It’s Time to Reimagine Ranch Dressing

Plant-based Ranch Dressing

This ranch dressing is sure to be one of the creamiest whole food, plant-based dressings out there! It is one of my favorites and we use it on salads, bean burgers, dip for cauliflower wings, and veggies. The possibilities are endless!

Do you want to know the secret ingredient that makes this so thick and creamy? Hemp seeds! Not only do they add great flavor and texture to this dressing, but they are also packed with nutrients. Enjoy!

Ingredients

  • 1 cup soaked cashews
  • ¼ cup hemp seeds
  • ¾ cup soy or other plant milk
  • 3 tbsp lemon juice
  • 2 tbsp rice vinegar
  • 1 tsp onion powder
  • 1 small garlic clove
  • 4 dates, chopped
  • 1 tsp dijon mustard
  • ¾ tsp salt
  • 1 ½ tsp dill weed
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • ½ tsp black pepper

How To Do It

Add the first 10 ingredients to a high-speed blender and blend on high until very smooth. Add the dill weed, parsley, basil, and pepper and blend for a quick second just to mix the remaining ingredients.

Store in an airtight container in the fridge for up to one week. Dressing with thicken over time. If desired, add a small amount of water to thin before use.

Take Note:

Since I use soaked cashews for several different recipes, I like to keep them on hand in my freezer. To do this, get a bag of raw, unsalted cashews and soak for 6 hours or overnight.

Next drain them, put them into a freezer bag and store in the freezer. When it comes time to use them for the first time, give the bag a good wack on the counter and they will separate. These will stay good in the freezer for at least 6 months, but if you’re anything like me, you’ll use them up way before then!

When you’re in a pinch and forget to have soaked cashews on hand, you can measure out what you need and soak them in boiled water for 30-60 minutes. Then drain and rinse them when they are done.

I don’t recommend this method as a first option because it is time-consuming, the cashews won’t be as creamy and you’ll lose some of the nutrients by boiling them – but it’s always nice to have this option when needed!
